This cake tastes wonderful--the apple filling keeps it moist, and the crispy crunch of its nut mixture makes it seem forever fresh. Apple Cream Coffee Cake is always on my menu for brunch, and good for snacking at any time of day!

'WE HAVE four very productive apple trees in our backyard, so I make a lot of recipes that call for apples. Even then, we'll often end up giving bushels of them away. This apple dessert is one of my family's favorites. If you're serving a larger group, I've found that it goes a little further when cut into squares rather than slices like a traditional apple pie.'

'MY AUNT made a mighty breakfast that revolved around 'The Big Pancake'. I always enjoyed watching as she poured the batter into her huge iron skillet, then baked the confection to perfection in the oven. 'The delicious result defied description! It was a sort of combination pancake, waffle and cruller. 'Sprinkled with powdered sugar and garnished with wedges of lemon, this crispy, golden-brown treat--which covered a dinner plate!--was as delightful to the eye as it was to the palate.'
