Creamy Salsa Dressing

"Serrano peppers, cilantro, and lime in this creamy dressing bring the bright flavors of salsa to a green salad."

INGREDIENTS (Nutrition)

  • 1 medium Roma tomato, cut into quarters
  • 1/4 small red onion (use less if strong), cut into quarters
  • 1/3 cup packed cilantro
  • 1/2 medium serrano chile pepper, cut into quarters
  • 1 large garlic clove, cut in half
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/2 cup mayonnaise
  • 3 tablespoons NAKANO® Seasoned Rice Vinegar - Basil and Oregano or Original
  • 1 lime (grated zest of 1 lime and 1 tablespoon juice)
  • 1/2 teaspoon ground cumin

DIRECTIONS

  1. In a food processor, pulse tomato, onion, cilantro, serrano, garlic, pepper, and salt until finely chopped. Transfer salsa to a sieve; drain 5 minutes, gently pressing with a spoon to remove excess liquid (discard liquid). Transfer salsa to a small bowl; stir in mayonnaise, seasoned rice vinegar, lime zest and juice, and cumin. Adjust heat level with serrano or cayenne pepper to taste. Use to dress taco salad, tossed greens, tacos, or tostadas.

FOOTNOTE

  • Use gloves while handling chile peppers to avoid burning skin. Avoid touching eyes. Immediately wash hands and utensils with soap and water when done handling peppers.
