About me:
I've always loved to cook, and have usually had my family's kitchen at my disposal. As I transition to the "real world," however, I don't have every kind of pot, pan, or ingredient around. My dinner plans change daily, so I can't count on using zucchini before it withers and dies. The upside of my situation is that I've become a more creative chef, learning to make the most out of whatever's around the apartment. My lesson: cheap and simple can be very tasty!

Venison Stew I

This was very good! I only had a pound or so of venison steak, but it seemed to be plenty. I added some celery and some corn to the stew to give it more substance. I'm not a huge fan of venison, but it tasted more like beef cooked in this way. It was a bit tough, maybe remedied by cooking it longer in the broth. Oh, I used a can of beef broth in place of two cups of water, and I splashed in some red wine as well. Veyr good and I will probably make it again the next time a friend gives us some deer meat.

Potato Ham Skillet

I made this vegetarian by omitting the ham and adding extra egg (I used 6). The end result was really good! I love how the dish holds together and you can serve slices. I didn't have any problem with the potato overly browning like the previous reviewer. You can add any veggies to this as well. I would add garlic powder, salt, and pepper to the eggs before pouring on. The cheese, I felt, was not necessary. Thanks for the recipe!

Spicy Melted Cheese Dip

This dip is always a hit at get togethers. I usually make it with ground beef only. Clean up is not fun because the cheese hardens onto everything, but it's quick and easy to make! Sometimes I use Velveeta with diced chiles for some extra heat.
