Twice Baked Sweet Potatoes with Ricotta Cheese

We try to use sweet potatoes as much as possible as their nutritional value far exceeds the traditional potato. While this does take some time to prepare, the taste was worth the effort.

Cheddar Artichoke Quiche Cups

This was very tasty. I made it for my moms group and it was gobbled up. I doubled it so I made it in a 7x10 glass casserole dish. 30 minutes at 325. I didn't do the hot pepper sauce but instead I did hot pepper flakes. just a shake or two. ALSO, an overnight tip. I mixed the egg mixture leaving out the breadcrumbs. I also sauteed the onion and garlic and mixed it into the chopped artichokes. In the a.m. I mixed it all together and added 1/2 cup of sharp cheddar to the mix and 1/2 cup on top before baking. Turned out great and the prep work was mostly done the night before!

Slow Cooker Rosemary and Red Pepper Chicken

I was a bit skeptical about this recipe as it was way too easy. My husband absolutely loved this, but he did add some jarred mushrooms to his serving. I thought it was pretty tasty, especially given the effort and that this recipe did not include a can of cream soup or a pkg of dried onion soup. I would probably add additional veggies, maybe potatoes, so as not to require preparing additional side dishes.
