New Jersey

One of the original Thirteen Colonies, the Garden State is called the “Crossroads of the Revolution” because British and Continental Armies frequently criss-crossed it during the American Revolution. On Christmas morning, 1776, George Washington famously crossed the Delaware River into New Jersey, defeating first the Hessians and then the British. New Jersey remains a crossroads today; it’s part of the Northeast megalopolis, a densely populated corridor that connects suburbs from Washington, D.C. all the way north to Boston. Cranberry sauce, saltwater taffy, and the ice cream cone are New Jersey creations. Jersey is also the diner capital of the world and a major producer of tomatoes, sweet corn, cranberries, peaches, and blueberries. Camden, New Jersey, is the home of Campbell’s Soup Company, which has been in operation since shortly after the American Civil War. By the middle of the 20th century, Campbell’s would have a big impact on the way Americans cooked and ate, once cooks began incorporating condensed soups into dishes like casseroles. New Jersey remains a major player in food processing, including canning and freezing food.

Cajun Style Meatloaf

Reviewed on Oct. 11, 2008 by jvfalcon
My boyfriend and I just made this for the first time. We used tabasco and found it a little spicy and next time will try a milder pepper sauce. This is replacing our plain old boring meatloaf. We absolutely love this recipe!

Shrimp Scampi Bake

Reviewed on Oct. 10, 2008 by Marcia
Definitely a keeper. My husband and both teenagers liked it. I used frozen, peeled and deveined shrimp instead of fresh, and heated the butter mixture in the microwave instead of on the stove top. This reduced prep time to about 5 mintues. I had to double the time in the oven because I didn't thaw the shrimp first.

Iced Pumpkin Cookies

Reviewed on Oct. 10, 2008 by Kimbo
Delicious cookies! I did make some healthier substitutes: I used Splenda instead of sugar, used 2 egg whites instead of 1 egg, added 1 cup unsweetened applesauce, 2 cups canned pumpkin puree and eliminated the flour and used 4 cups oats. I used a soup spoon to keep size consistent and baked for 12 minutes. They will be softer because of the applesauce, but hold together nicely when cooled. For my icing, I used confectioners sugar plus Coffee Mate's coconut cream flavor liquid creamer to add a little flavor to the cookies. Got rave reviews, especially from my diabetic friends!
